Apple Cheddar Scones

 

Ingredients

 

Makes 6 scones

  • 1 1/2 cups all-purpose flour

  • 1/2 cup toasted wheat germ

  • 3 tablespoons sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons butter

  • 1 small Washington Rome apple, cored and chopped

  • 1/4 cup shredded Cheddar cheese

  • 1 large egg white

  • 1/2 cup low-fat (1 %) milk


Method:

  1. Heat oven to 400°F. Grease an 8-inch round cake pan.

  2. In medium-size bowl, combine flour, wheat germ, sugar, baking powder and salt. With two knives or pastry blender, cut in butter until the size of coarse crumbs.

  3. Toss chopped apple and cheese in flour mixture. Beat together egg white and milk until well combined. Add to flour mixture, mixing with fork until dough forms.

  4. Turn dough out onto lightly floured surface and knead 6 times. Spread dough evenly in cake pan and score deeply with knife into 6 wedges.

  5. Bake 25 to 30 minutes or until top springs back when gently pressed. Let stand 5 minutes; remove from pan. Cool before serving.
