Banana Bread
Ingredients
Makes two
8-inch loaves
(12
slices
each)
or one 9-inch loaf
(24 slices)

1 cup cereal
-
1 1/2 cups mashed
ripe bananas (3 to 4 medium)

2/3 cup milk
-
1 teaspoon
vanilla
-
1 1/4 cups sugar
-
1/2 cup
margarine, softened

2 eggs
-
2 1/2 cups all-purpose flour
-
3 teaspoons
baking powder
-
1 teaspoon
ground cinnamon

1/2 teaspoon salt
Method:

Place oven rack in lowest position. Heat oven to 350°F. Grease bottoms
only of two
8 1/2x4 1/2x2
1/2-inch loaf pans or one 9x5x3inch loaf
pan.

Crush cereal. Stir together cereal,
bananas, milk and vanilla; let stand about 5 minutes
or until cereal is softened.

Stir together sugar
and margarine in large bowl. Stir in eggs until well
blended.

Beat in banana mixture thoroughly with
fork. Stir in remaining ingredients just until
moistened. Pour into prepared pans.

Bake S-inch loaves 40 to 50 minutes (9-inch loaf
50 to 60 minutes) or until toothpick inserted in
centers comes out clean. Cool 10 minutes.

Loosen
sides of loaves; remove from pans to wire racks.
Cool completely before slicing.
Note: Place cereal in
plastic bag or between sheets of waxed paper
and crush with rolling pin. Or, crush in
blender or food processor.
