Cherry-up Biscuits
Ingredients
Makes
1 dozen
biscuits

1 1/2 cups all-purpose
flour
-
1 tablespoon
baking powder
-
1 1/2 teaspoons granulated
sugar
-
1/4 cup shortening
-
1/2 teaspoon salt
-
1/2 teaspoon cream of
tartar
-
1/2 cup milk
-
1/2 cup butter, melted
-
1/4 cup packed brown
sugar
-
1 can (21 ounces)
tart cherry pie filling
Method:
-
Preheat oven to
425°F. Place flour, baking powder, granulated sugar,
shortening, salt and cream of tartar in food
processor fitted with metal blade.

Process using
on/off pulsing action until mixture resembles coarse
crumbs, about 10 seconds.

Pour milk over flour mixture. Process on/off 4 to 6
times, or just until mixture is blended and dough is
soft. Turn
dough onto lightly floured surface. Knead gently a
few times. Roll or pat dough out until 1/2 inch
thick.

Cut dough into 2 1/2-inch circles using
floured cutter. Put 1 teaspoon butter, 1 teaspoon
brown sugar and 1 heaping tablespoon pie filling in
each of 12 un-greased muffin cups.

Place
1 biscuit in each cup. Brush with remaining butter.
Bake until biscuits are golden brown, 12 to 15
minutes. Invert and un-mold biscuits. Serve warm.
