2/3 cup sugar

1/3 cup Dried Plum
Puree (refer below recipe) or prepared
dried plum butter

2 egg whites
-
1/4 cup
semisweet miniature chocolate chips,
melted

1/2 cup nonfat milk
-
1
teaspoon vanilla
-
1 1/3 cups all-purpose
flour
-
1/2 teaspoon baking
powder
-
1/2 teaspoon-salt
-
1/4 teaspoon baking
soda

1/3 cup semisweet
miniature chocolate chips
Method:

Preheat oven to 350°F. Coat
8 1/2x4
1/2x2 3/4-inch loaf pan with vegetable cooking spray.

In mixer
bowl, beat sugar, dried plum puree, egg whites and
melted chocolate chips until well blended. Mix in
milk and vanilla.

In medium bowl, combine flour,
baking powder, salt and baking soda; stir into sugar
mixture just until blended. Stir in chocolate chips.
Spoon batter into prepared pan.

Bake in center of
oven 40 to 45 minutes until springy to the touch and
pick inserted into center comes out clean.

Cool in
pan 5 minutes; remove from pan to wire rack. Cool
completely before slicing.
Dried Plum Puree:
Combine 1 1/3 cups (8 ounces) pitted dried
plums and 6 tablespoons hot water in container of
food processor or blender. Pulse on and off until
dried plums are finely chopped and smooth. Store
leftovers in covered container in refrigerator for
up to two months. Makes 1 cup.
