Chocolate Chunk Sour Cream

1/2 cup milk

tablespoons Instant
Coffee, any variety

1 1/2 cups flour

1/2 cup
sugar

1 1/2 teaspoons
Baking Powder

1/2
teaspoon cinnamon

1/4
teaspoon salt

2 eggs
-
1/2 cup
Sour Cream or plain
yogurt

1/4 cup
(1/2 stick) butter or margarine, melted

1 teaspoon vanilla

1 package (4 ounces)
Sweet Baking
Chocolate, chopped
Method:

Heat oven to 375°F. Stir milk and
instant coffee in small bowl until well blended; set
aside.

Mix flour, sugar, baking powder, cinnamon and
salt in large bowl.

Beat eggs in small bowl; stir in
coffee-milk mixture, sour cream, butter and vanilla
until well blended. Add to flour mixture; stir just
until moistened. Stir in chopped chocolate.

Spoon
batter into greased or paper-lined muffin pan,
filling each cup 2/3 full.

Bake for 30 minutes or
until toothpick inserted into center comes out
clean. Serve
warm.
