Coconut Date Nut Quick Bread

 

Ingredients

 

Makes  12 servings

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2 eggs

  • 3/4 cup thawed frozen unsweetened apple juice concentrate

  • 1/4 cup (1/2 stick) butter, melted

  • 1/4 cup fat-free (skim) milk

  • 2 teaspoons vanilla

  • 1 cup chopped pitted dates

  • 1/2 cup chopped walnuts or pecans

  • 1/3 cup unsweetened flaked coconut

  • Cream cheese (optional)


Method:

  1. Preheat oven to 350°F. Combine dry ingredients in medium bowl; set aside.

  2. Beat eggs in separate medium bowl. Blend in apple juice concentrate, butter, milk and vanilla. Add to dry ingredients; mix just until moistened.

  3. Stir in dates, walnuts and coconut. Spread into greased 9x5-inch loaf pan.

  4. Bake 45 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan; cool completely.

  5. Slice and serve at room temperature, or toast slices and spread with cream cheese, if desired.
