2 cups all-purpose
flour

2 teaspoons baking
powder

1/2 teaspoon baking
soda

1/2 teaspoon salt

2 eggs

3/4 cup thawed frozen unsweetened apple juice concentrate

1/4 cup (1/2 stick) butter, melted

1/4 cup fat-free (skim) milk

2 teaspoons vanilla
-
1 cup chopped pitted dates
-
1/2 cup chopped walnuts or pecans

1/3 cup unsweetened flaked coconut

Cream cheese
(optional)
Method:

Preheat oven to 350°F. Combine dry ingredients in
medium bowl; set aside.

Beat eggs in separate
medium bowl. Blend in apple juice concentrate,
butter, milk and vanilla. Add to dry ingredients;
mix just until moistened.

Stir in dates, walnuts
and coconut. Spread into greased 9x5-inch loaf pan.

Bake 45 minutes or until toothpick inserted in
center comes out clean. Cool 10 minutes in pan on
wire rack. Remove from pan; cool completely.

Slice
and serve at room temperature, or toast slices and
spread with cream cheese, if desired.
