Country Pecan Pie

 

Ingredients

 

Makes one 9-inch pie              

  • Pie pastry for single 9-inch pie crust

  • 1 3/4 cups dark com syrup

  • 4 eggs

  • 1/2 cup packed light brown sugar

  • 1/4 cup (1/ stick) butter or margarine, melted

  • 2 teaspoons all-purpose flour

  • 1 1/2 teaspoons vanilla

  • 1 1/2 cups pecan halves


Method:

  1. Preheat oven to 350°F. Roll pastry on lightly floured surface to form 13-inch circle. Fit into 9-inch pie plate. Trim edges; flute. Set aside.

  2. Combine com syrup, eggs, brown sugar and melted butter in large bowl; beat with electric mixer on medium speed until well blended.

  3. Stir in flour and vanilla until blended. Pour into unbaked pie crust. Arrange pecans on top.

  4. Bake 40 to 45 minutes until center of filling is puffed and golden brown. Cool completely on wire rack. Garnish as desired.
