Crisp Cheese Popovers
Ingredients

popovers

Nonstick cooking
spray
-
1 cup sifted
all-purpose flour, plus additional for
dusting pan
-
1 cup fat-free
(skim) milk
-
1 tablespoon melted
margarine
-
1/4 teaspoon
salt
-
1/2 cup egg
substitute or 2 eggs beaten

1/4 cups (5 ounces)
shredded cheese
Method:

All ingredients
should be at room temperature. Preheat oven to
450°F. Spray 9 cups in muffin tin with cooking
spray.

Lightly flour prepared muffin cups, tapping
out excess flour. (If there are unfilled cups in
muffin tin, fill each with 1/2 inch water to prevent
burning.)

Place milk and margarine in blender or
mixing bowl. Add 1 cup flour and salt; blend until
smooth, scraping down sides of blender if necessary.

Gradually add egg substitute and blend until smooth.
Working quickly to ensure batter will rise, pour 1
tablespoon batter into each prepared muffin cup and
top with 2 tablespoons cheese.

Pour in remaining
batter, dividing evenly (about 2 tablespoons per
cup). Muffin cups should be 2/3 full.

Bake immediately. After 20 minutes, without opening
oven door, reduce oven temperature to 350°F
and bake 15 minutes for medium, soft or 20 minutes
for crisper popovers. Popovers are done when sides
are firm.
