Grandma's Bran Muffins
Ingredients
Makes
48 muffins

2 1/2 cups bran
flakes, divided
-
1 cup raisins
-
1 cup boiling water
-
1/2 cup canola oil
-
1 cup Molasses
-
2 eggs, beaten
-
2 cups buttermilk
-
2 3/4 cups all-purpose
flour
-
2 1/2 teaspoons baking
soda

1/2
teaspoon salt
Method:
-
Heat oven to 400°F.
In medium bowl, mix 1 cup bran flakes, raisins and
water. Set aside.
-
In large bowl, combine remaining
ingredients. Mix in bran-raisin mixture. Pour into
greased muffin pan cups.
-
Fill 2/3 full and bake for
20 minutes. Remove muffins and place on rack to
cool.
