Grandmas' Ginger

1/2 cup shortening
or butter

1/2 cup sugar

1 cup
Molasses
-
2 eggs
-
2 1/2 cups all-purpose flour

1 teaspoon salt
-
2 teaspoons baking
powder

1/2 teaspoon baking soda

1 teaspoon ground
ginger
-
2 teaspoons ground
cinnamon

1/2 teaspoon ground
cloves
-
1 cup hot water
Method:
-
Heat oven to 350°F. In medium bowl, blend shortening
with sugar, add molasses and eggs. Beat well. Sift
dry ingredients, add alternately with water to
molasses mixture.

Bake in greased 9-inch square pan,
about 50 minutes, measure
baking powder and baking soda carefully.

Too much
leavening gives quick bread a dry texture and a
bitter aftertaste. Too little leavening produces
bread with a dense, heavy texture.
