Grandmas' Ginger Bread

 

Ingredients

 

Makes  16 servings

  • 1/2 cup shortening or butter

  • 1/2 cup sugar

  • 1 cup Molasses

  • 2 eggs

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon salt

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon ground ginger

  • 2 teaspoons ground cinnamon

  • 1/2 teaspoon ground cloves

  • 1 cup hot water


Method:

  1. Heat oven to 350°F. In medium bowl, blend shortening with sugar, add molasses and eggs. Beat well. Sift dry ingredients, add alternately with water to molasses mixture.

  2. Bake in greased 9-inch square pan, about 50 minutes, measure baking powder and baking soda carefully.

  3. Too much leavening gives quick bread a dry texture and a bitter aftertaste. Too little leavening produces bread with a dense, heavy texture.
