Bread
Ingredients

mini loaves

2/3 cup packed light
brown sugar
-
1/2 cup butter, softened
-
2 cups miniature semisweet chocolate
chips, divided
-
2 eggs
-
2 1/2 cups
all-purpose flour
-
1 1/2 cups
applesauce
-
1 teaspoon baking soda
-
1 teaspoon baking powder
-
1/2 teaspoon
salt
-
1/2 teaspoons
vanilla
-
1 tablespoon shortening (do not use
butter, margarine, spread or oil)
Method:

Preheat oven to 350°F.
Grease 5 (5 1/2x3inch) mini loaf pans. Beat
brown sugar and butter in large bowl with electric
mixer until creamy.

Melt 1 cup chocolate chips; cool
slightly and add to sugar mixture with eggs. Add
flour, applesauce, baking soda, baking powder, salt
and vanilla; beat until well mixed. Stir in 1/2 cup
chocolate chips.

Spoon batter into prepared pans;
bake 35 to 40 minutes or until center crack is dry
to the touch. Cool 10 minutes before removing from
pans.

Place remaining 1/2 cup chocolate chips and
shortening in small microwavable bowl. Microwave at
HIGH 1 minute; stir.

If necessary, microwave at HIGH
an additional 15 seconds at a time, stirring after
each heating. Drizzle warm loaves with glaze. Cool
completely.
