Lots O' Chocolate Bread

 

Ingredients

 

Makes  5 mini loaves

  • 2/3 cup packed light brown sugar

  • 1/2 cup butter, softened

  • 2 cups miniature semisweet chocolate chips, divided

  • 2 eggs

  • 2 1/2 cups all-purpose flour

  • 1 1/2 cups applesauce

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoons vanilla

  • 1 tablespoon shortening (do not use butter, margarine, spread or oil)


Method:

  1. Preheat oven to 350°F. Grease 5 (5 1/2x3­inch) mini loaf pans. Beat brown sugar and butter in large bowl with electric mixer until creamy.

  2. Melt 1 cup chocolate chips; cool slightly and add to sugar mixture with eggs. Add flour, applesauce, baking soda, baking powder, salt and vanilla; beat until well mixed. Stir in 1/2 cup chocolate chips.

  3. Spoon batter into prepared pans; bake 35 to 40 minutes or until center crack is dry to the touch. Cool 10 minutes before removing from pans.

  4. Place remaining 1/2 cup chocolate chips and shortening in small microwavable bowl. Microwave at HIGH 1 minute; stir.

  5. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating. Drizzle warm loaves with glaze. Cool completely.
