Spiced Kahlua Loaf

small or 1 large loaf

1/4 cups all-purpose flour

1 cup whole
wheat flour

3/4 cup sugar

2 teaspoons
baking powder

1 teaspoon
salt
-
3/4 teaspoon baking
soda

1/2 teaspoon cinnamon
-
1/4 teaspoon ginger
-
3 eggs
-
1/3 cup Liqueur
-
3/4 cup oil
-
1 1/2 cups grated carrots,
lightly packed

1/2 cup finely
chopped hazelnuts

Kahlua Glaze
(refer below recipe)

Chopped nuts
(optional)
Method:

Stir together flours,
sugar, baking powder, salt, baking soda, cinnamon
and ginger in large bowl.

Beat eggs well in medium
bowl. Beat in Kahlua and oil; blend egg mixture
into flour mixture. Add carrots and nuts; mix well.

Divide batter between two well greased loaf pans
7 1/2x3-3/4x2 1/4-inches) or one pan (9x5x3-inches).

Bake
in 350°F oven 40 minutes for small loaves or about
60 minutes for larger loaf, until wooden toothpick
inserted in centers of loaves comes out clean. Cool
in pan 10 minutes; turn out onto wire rack to cool
completely.

Brush Kahlua Glaze over top of cooled
loaves. Sprinkle with chopped nuts, if desired,
before glaze sets.
To prepare Kahlua Glaze:
Combine 2 cups powdered sugar, 2 tablespoons Kahlua and 1 tablespoon heavy cream in large
bowl; beat until smooth.
