Spicy Cheese Bread

 

Ingredients

 

Makes 2 loaves

  • 2 packages active dry yeast

  • 1 teaspoon granulated sugar

  • 1/2 cup warm water (110°F)

  • 8 3/4 cups flour, divided        

  • 3 cups shredded Jarlsberg or Swiss cheese

  • 2 tablespoons chopped fresh rosemary or 2 teaspoons dried

  • rosemary

  • 1 tablespoon salt

  • 1 tablespoon Pepper Sauce

  • 2 cups milk

  • 4 large eggs, lightly beaten


Method:

  1. Combine yeast, sugar and warm water. Let stand 5 minutes until foamy. Meanwhile, combine 8 cups flour, cheese, rosemary, salt, and Sauce in large bowl.

  2. Heat milk in small saucepan until warm (120° to 1300P). Stir milk into flour mixture. Set aside 1 tablespoon beaten egg. Add remaining eggs to flour mixture with foamy yeast mixture; stir until soft dough forms.

  3. Knead dough on lightly floured surface adding enough remaining flour to make a smooth and elastic dough, about 5 minutes.

  4. Shape dough into a ball; place in large greased bowl. Cover with towel and let rise in warm place until doubled, about 1 1/2 hours.

  5. Grease two large cookie sheets. Punch down dough and divide in half. Cut each half in three strips and braid.

  6. Place braided loaves on cookie sheets. Cover and let rise in warm place until almost doubled, 30 minutes to 1 hour.

  7. Preheat oven to 375°F. Brush loaves with reserved egg. Bake 45 minutes or until loaves sound hollow when tapped. Remove to wire racks to cool.
