Wild Rice Breakfast Bread

 

Ingredients

 

Makes 10 servings

  • 1/4 cup extra light margarine, softened

  • 1/4 cup packed brown sugar

  • 4 egg whites

  • 1 teaspoon vanilla extract

  • 1 1/2 cups well cooked wild rice

  • 1/2 cup chopped pecans

  • 3/4 cup whole wheat flour

  • 3/4 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 2 teaspoons ground cinnamon

  • 3/4 cup skim milk

  • Maple Butter (recipe follows), optional


Method:

  1. Preheat oven to 325°F. Grease 8x4-inch loaf pan.

  2. Beat margarine and brown sugar in large bowl until creamy. Add egg whites and beat until fluffy. Add vanilla. Stir in rice and pecans.

  3. Combine flours, baking powder, salt and cinnamon. Add flour mixture alternately with milk to rice mixture; stir just until flour mixture is moistened. Pour into prepared pan.

  4. Bake about 55 minutes or until wooden pick inserted in center comes out clean. Serve with Maple Butter, if desired.
