Crisp Dessert Recipes - Chocolate Orange Pavlova Recipe

Ingredients

  • 3 egg whites

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 30 ml/2 tbsp cocoa (unsweetened chocolate) powder

  • 5 ml/1 tsp vinegar

  • 150 ml/2/3 cup double (heavy) cream

  • 45 ml/3 tbsp chocolate spread

  • 3-4 oranges, segmented


Method:

  1. Whisk the egg whites until stiff.  Gradually mix in the sugar, whisking well after each addition, until stiff and glossy.

  2. Sift the corn flour and cocoa over the surface, add the vinegar and fold in gently with a metal spoon.

  3. Spread into a 23 cm/9 in circle on a piece of baking parchment on a baking (cookie) sheet, hollow out the centre slightly.

  4. Bake in a preheated oven at 140°C/275°F/gas mark 1 for about 2 hours until crisp. Leave to cool.

  5. Carefully slide off the paper and transfer to a serving plate. Whip the cream until peaking and fold in the chocolate spread.

  6. Spread over the pavlova and decorate with the orange segments. Serve within 2 hours.
