Crisp Dessert Recipes - Kiwi Pavlova Recipe

Ingredients

  • 4 egg whites

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 1.5 ml/1/4 tsp vanilla essence (extract)

  • 10 ml/2 tsp vinegar

  • Whipped cream

  • 3-4 kiwi fruit, sliced


Method:

  1. Whisk the egg whites until stiff. Gradually whisk in the sugar, then the corn flour, vanilla and vinegar.

  2. Spoon in a large circle on baking parchment on a baking (cookie) sheet, making a slight hollow in the centre.

  3. Bake in a preheated oven at 150°C/300°F/gas mark 2 for 1 1/2 hours until a pale biscuit color, crisp on the outside and slightly fluffy in the middle.

  4. Leave to cool. Transfer to a serving plate, fill the centre with whipped cream and top with the kiwi fruit.
