Dessert Recipes - Enriched Bread Pudding Recipe
Ingredients

100 g/4 oz whole meal bread, cubed

150 ml/2/3 cup
milk
-
3 eggs, lightly beaten
-
50 g/2 oz/1/4 cup dark
brown sugar

5 ml/1 tsp ground
cinnamon
-
5 ml/1 tsp grated
nutmeg
-
5 ml/1 tsp ground mace
-
175 g/6 oz/1 cup dried
mixed fruit (fruit cake mix)
-
20 g/1 1/2 tbsp
butter; melted

Caster (superfine)
sugar; for sprinkling

Cream or custard, to serve
Method:
-
Put the bread in a bowl. Add the milk
and leave to soak
for 30
minutes. Beat well with a fork. Mix in the eggs,
sugar, spices and fruit.

Brush
a 1.5 liter/6 cup ovenproof dish with some
of the
butter. Turn the mixture into the dish and level the
surface. Drizzle with the remaining butter.

Bake in
a preheated oven at 180C/350F/gas
mark 4 for
about
1 hour or until golden
brown and set.

Allow to cool slightly, sprinkle with
caster sugar and serve cut
into squares with
cream or
custard.
