Dessert Recipes - Eve's Pudding Recipe

Ingredients

  • A little butter, for greasing

  • 750 g/1 1/2 lb cooking (tart) apples, sliced

  • 5 ml/1 tsp ground cinnamon

  • 15 ml/1 tbsp water

  • 75 g/3 oz/1/3 cup light brown sugar

  • 50 g/2 oz/1/4 cup soft tub margarine

  • 50 g/2 oz/1/4 cup caster (superfine) sugar, plus extra for sprinkling

  • 1 egg, beaten

  • 100 g/4 oz/1 cup self-raising flour

  • 30 ml/2 tbsp milk

  • Pouring cream, to serve


Method:

  1. Butter a 1.2 liter/2 pt/5 cup ovenproof dish. Mix together the apple slices and cinnamon and place in the dish.

  2. Add the water and cover with the brown sugar. Beat together the margarine and caster sugar until light and fluffy. Beat in the egg.

  3. Sift the flour over the surface and fold in with a metal spoon. Add enough of the milk to form a soft, dropping consistency. Spread over the apple mixture.

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 45 minutes until firm, well risen and the apples are cooked through.

  5. Sprinkle with a little extra caster sugar and serve with pouring cream.
