Dessert Recipes - Frinklies Recipe

Ingredients

  • 50 g/2 oz/1/4 cup soft margarine

  • 50 g/2 oz/1/4 cup caster (superfine) sugar

  • 2 eggs

  • 50 g/2 oz/1/2 cup plain (all-purpose) flour

  • 150 ml/2/3 cup milk

  • Warmed jam (conserve) or clear honey

  • Sifted icing (confectioners') sugar, for dusting


Method:

  1. Beat together the margarine, sugar, eggs and flour until smooth, then stir in the milk (don't worry if it curdles).

  2. Grease the 12 sections of a bun tin (muffin pan). Spoon in the mixture and bake in a preheated oven at 200C/400F/gas mark 6 for 15-20 minutes until set and golden.

  3. They will sink when they come out of the oven.  Arrange three on each of four serving plates.

  4. Spoon a little warmed jam or clear honey over and dust with icing sugar before serving.
