Country Apple Cake Recipe
Ingredients

3 large cooking
(tart) apples, sliced

3 eggs
-
250 g/9 oz/generous 1 cup caster (superfine) sugar

100 g/4 oz/1/2 cup
margarine
-
150 ml/2/3 cup
cider
-
200 g/7 oz/1 3/4 cups
plain (all-purpose) flour
-
15 ml/1 tbsp baking
powder
-
1.5 ml/1/4 tsp ground
cloves
-
Hot Lemon Sauce,
to serve
Method:

Put the apple slices in cold water to prevent
browning. Whisk together the eggs and 225 g/8
oz/1 cup of the sugar until thick and pale and the
whisk leaves a trail when lifted out of the mixture.

Melt the margarine in a saucepan with the cider.
Bring to the boil and stir into the eggs and sugar.
Sift the flour and baking powder over the surface
and fold in with a metal spoon.

Pour into a greased
and floured roasting tin (pan). Lay the apple slices
attractively over.
Mix the remaining sugar with the ground cloves and
sprinkle over.

Bake in a preheated oven at
200°C/400°F/gas mark 6 for about 40 minutes
until golden and the centre springs back when
lightly pressed.

Cut the cake into squares and
transfer to warmed serving plates. Serve with Hot
Lemon Sauce.
