Dessert Recipes - West Country Apple Cake Recipe

Ingredients

  • 3 large cooking (tart) apples, sliced

  • 3 eggs

  • 250 g/9 oz/generous 1 cup caster (superfine) sugar

  • 100 g/4 oz/1/2 cup margarine

  • 150 ml/2/3 cup cider

  • 200 g/7 oz/1 3/4 cups plain (all-purpose) flour

  • 15 ml/1 tbsp baking powder

  • 1.5 ml/1/4 tsp ground cloves

  • Hot Lemon Sauce, to serve


Method:

  1. Put the apple slices in cold water to prevent browning. Whisk together the eggs and 225 g/8 oz/1 cup of the sugar until thick and pale and the whisk leaves a trail when lifted out of the mixture.

  2. Melt the margarine in a saucepan with the cider. Bring to the boil and stir into the eggs and sugar. Sift the flour and baking powder over the surface and fold in with a metal spoon.

  3. Pour into a greased and floured roasting tin (pan). Lay the apple slices attractively over. Mix the remaining sugar with the ground cloves and sprinkle over.

  4. Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 40 minutes until golden and the centre springs back when lightly pressed.

  5. Cut the cake into squares and transfer to warmed serving plates. Serve with Hot Lemon Sauce.
