Dessert Recipes - Apple and Raisin Brulee Recipe
Ingredients

750 g/1 1/2
lb cooking
(tart)
apples, sliced

Grated rind and juice of
1/2
lemon

ml/4 tbsp water

g/2 oz/1/4 cup caster (superfine) sugar

100 g/4 oz/2/3 cup
raisins

A
pinch of ground cinnamon

ml/2 1/2 cups double (heavy)
cream, lightly whipped

g/2 oz/1/4 cup light brown sugar

Shortbread
Triangles, to serve
Method:

Put the apple slices, lemon rind and juice, water,
caster sugar, raisins and cinnamon in a large
saucepan.

Cover and cook gently for about 20 minutes
until the apples are just tender but still hold
their shape.

Turn into a large shallow flameproof
serving dish and leave until cold. Spoon over the
cream and chill overnight.

When almost ready to serve, sprinkle the top with
the brown sugar and place under a hot grill
(broiler) until the sugar melts and bubbles. Serve
straight away with Shortbread Triangles.
