Dessert Recipes - Avocado Cheesecake Recipe

Ingredients

  • 50 g/2 oz/1/4 cup butter

  • A pinch of ground cinnamon

  • 200 g/7 oz/1 small packet of Nice or other coconut biscuits (cookies), crushed

  • Oil, for greasing

  • 7.5 ml/1 1/2 tsp powdered gelatin

  • 15 ml/1 tbsp water

  • 1 orange

  • 1 large avocado

  • 10 ml/2 tsp lemon juice

  • 90 g/1 small packet of medium fat soft cheese

  • 150 ml/2/3 cup crème fraiche

  • 45 ml/3 tbsp icing (confectioners') sugar

  • 1 egg white

  • A mint sprig, to decorate


Method:

  1. Melt the butter and stir in the cinnamon and crushed biscuits. Press into the base of a lightly oiled 18 cm/7 in flan ring set on a flat serving plate. Chill until firm.

  2. Meanwhile, sprinkle the gelatin over the water in a small bowl and leave to soften for 5 minutes.

  3. Stand the bowl in a pan of hot water and stir until the gelatin has dissolved completely (or heat briefly in the microwave).

  4. Halve the orange width ways. Finely grate the rind and squeeze the juice from one half. Thinly slice the other orange half, then halve the slices and reserve for decoration.

  5. Peel and halve the avocado, discard the stone (pit) and place in a bowl. Add the lemon juice, then mash with a fork.

  6. Beat in the dissolved gelatin, the cheese, crème fraiche and the orange rind and juice. Sweeten to taste with the icing sugar.

  7. Whisk the egg white until stiff and fold into the mixture with a metal spoon. Turn into the prepared flan ring and chill until set.

  8. Remove the flan ring. Decorate with the halved orange slices and a sprig of mint before serving.
