Dessert Recipes - Banana Cheesecake Recipe

Ingredients

  • 200 g/7 oz/1 small packet of digestive biscuits (graham crackers), crushed

  • 50 g/2 oz/1 cup bran flakes, crushed

  • 75 g/3 oz/1/2 cup butter, melted

  • 450 g/1 lb/2 cups medium1at soft cheese

  • 2 eggs, separated

  • Finely grated rind and juice of 1 lime

  • 15 ml/1 tbsp powdered gelatin

  • 3 bananas

  • 50 g/2 oz/1/4 cup caster (superfine) sugar

  • 150 ml/2/3 cup crème fraiche

  • A little lemon juice


Method:

  1. Mix together the biscuit crumbs, crushed flakes and butter and press into the base of a 20 cm/8 in spring form cake tin (pan).

  2. Beat the cheese with the egg yolks and lime rind. Sprinkle the gelatin over the lime juice in a small bowl and leave to soften for 5 minutes.

  3. Stand the bowl in a pan of hot water and stir until the gelatin has dissolved completely (or heat briefly in the microwave).

  4. Mash two of the bananas thoroughly with the sugar and stir in the gelatin mixture. Beat into the cheese mixture.

  5. Whisk the egg whites until stiff. Fold the crème fraiche, then the egg whites, into the cheese mixture, then turn into the prepared tin. Chill until set.

  6. Remove the tin and place the cheesecake on a serving plate. Slice the remaining banana thinly and dip in lemon juice to prevent browning. Use to decorate the top of the cheesecake.
