Dessert Recipes - Banana Conde Recipe

Ingredients

  • 50 g/2 oz/1/4 cup short-grain rice

  • 30 ml/2 tbsp corn flour (cornstarch)

  • 450 ml/2 cups milk

  • 150 ml/2/3 cup single (light) cream

  • 5 ml/1 tsp vanilla essence (extract)

  • 30 ml/2 tbsp caster (superfine) sugar

  • 4 bananas

  • Lemon juice

  • 45 ml/3 tbsp redcurrant jelly (clear conserve), warmed

  • 30 ml/2 tbsp rainbow coffee sugar or demerara sugar


Method:

  1. Put the rice in a pan and cover with boiling water. Bring back to the boil and simmer for t 5 minutes until tender. Drain.

  2. Blend the corn flour with a little of the milk in a saucepan. Blend in the remaining milk, the cream, vanilla and caster sugar. Stir in the rice.

  3. Bring to the boil and cook for 2 minutes, stirring all the time, until thickened and smooth. Leave until cold, stirring occasionally.

  4. Spoon into six glasses. Slice the bananas and toss in lemon juice. Arrange on top of the rice and brush with the redcurrant jelly.

  5. Sprinkle with rainbow coffee sugar and serve straight away.
