Dessert Recipes - Butterscotch Dessert Recipe

Ingredients

  • 50 g/2 oz/1/4 cup butter

  • 75 g/3 oz/1/3 cup light brown sugar

  • 90 ml/6 tbsp semolina (cream of wheat)

  • 600 ml/1 pt/2 1/2 cups milk

  • 150 ml/2/3 cup double (heavy) cream, whipped

  • Walnut halves, to decorate


Method:

  1. Put the butter and sugar in a pan and heat gently, stirring, until melted. Stir in the semolina and cook for 1 minute.

  2. Gradually stir in the milk, stirring all the time. Bring to the boil and cook for 3 minutes, stirring all the time, until thick and smooth.

  3. Allow to cool slightly, then turn into six wetted glass serving dishes. Cool, then chill. Decorate with whipped cream and walnut halves before serving.
