Ingredients

600 ml/1 pt/2 1/2
cups milk
-
2 eggs
-
2 egg yolks
-
30 ml/2 tbsp granulated
sugar
-
15 ml/1 tbsp instant
coffee powder or granules

Icing (confectioners')
sugar, for dusting
Method:

Bring the milk to the boil. Whisk together the eggs,
egg yolks, sugar and coffee thoroughly. Whisk in the
hot milk.

Strain into six individual ovenproof
dishes. Stand the dishes in a roasting tin (pan)
containing 2.5 cm/1 in boiling water.

Cover
the dishes with foil. Bake in a preheated oven at
160°C/325°F/gas mark 3 for about 40 minutes
until the custard is set.

Remove from the heat,
leave to cool, then chill. Dust with a little sifted
icing sugar before serving.
