Dessert Recipes - Creamy Orange Rice Mallow Recipe

Ingredients

  • 1 orange

  • 75 g/3 oz/1/3 cup short-grain rice

  • 900 ml/3 3/4 cups milk

  • 45 ml/3 tbsp granulated sugar

  • 12 white marshmallows

  • 45 ml/3 tbsp single (light) cream


Method:

  1. Thinly pare the rind from the orange and cut into thin strips. Boil in a little water for 3 minutes, drain, rinse with cold water and drain again.

  2. Squeeze the juice from the orange. Put the rice and milk in a saucepan with the sugar.

  3. Bring to the boil, reduce the heat, part-cover and simmer for 30 minutes until the rice is really tender, stirring occasionally to prevent sticking.

  4. Stir in the marshmallows until dissolved. Add the strained orange juice and allow to cool slightly. Stir in the cream.

  5. Spoon into glass dishes and top with the orange rind. Leave until cold, then chill before serving.
