Dessert Recipes - Creamy Rice with Bay Leaf Recipe

Ingredients

  • 750 ml/3 cups whole milk

  • 1 large bay leaf

  • Thinly pared rind of 1/2 orange

  • 15 g/1 tbsp unsalted (sweet) butter

  • 50 g/2 oz/1/4 cup short-grain pudding rice

  • 25 g/1 oz/2 tbsp granulated sugar

  • 50 g/2 oz/1/3 cup sultanas (golden raisins)


Method:

  1. Bring the milk, bay leaf and orange rind to the boil. Leave until cold. Use half the butter to grease a 900 ml/3 3/4 cup ovenproof dish.

  2. Put the rice, sugar and sultanas in the greased dish. Strain over the milk and dot with the remaining butter. Stir gently.

  3. Cook in a preheated oven at 150°C/300°F/gas mark 2 for 2 hours or until the rice is tender and creamy. Serve hot.
