Dessert Recipes - Creme Brulee Recipe

Ingredients

  • 450 ml/2 cups double (heavy) cream

  • 2.5 ml/1/2 tsp vanilla essence (extract)

  • 4 egg yolks

  • Caster (superfine) sugar


Method:

  1. Bring the cream just to the boil. Stir in the vanilla. Beat together the egg yolks and 15 ml/1 tbsp caster sugar.

  2. Gradually pour the cream over, whisking all the time. Place the bowl over a pan of simmering water and cook until the mixture thickly coats the back of a spoon.

  3. Pour into four to six ramekins (custard cups). Leave to cool, then chill until set.

  4. Cover with a thick layer of caster sugar and place under a hot grill (broiler) until the sugar caramelizes. Chill again before serving.
