Dessert Recipes - Flaked Rice Refresher Recipe

Ingredients

  • 50 g/2 oz/1/4 cup flaked rice

  • 600 ml/1 pt/2 1/2 cups milk

  • 450 g/1 lb rhubarb, cut into short lengths

  • 30 ml/2 tbsp water

  • 1 piece of stem ginger in syrup, finely chopped

  • 30 ml/2 tbsp ginger syrup from the jar Clear honey

  • Crystallized (candied) ginger, to decorate


Method:

  1. Put the rice and milk in a pan and mix thoroughly. Bring to the boil and cook for 2 minutes, stirring all the time.

  2. Cover with a lid, remove from the heat and leave to stand while preparing the rhubarb. Place the pieces in a saucepan with the water.

  3. Cover and cook gently until soft but still holding its shape. Add the chopped ginger and ginger syrup and sweeten to taste with honey. Keep warm.

  4. Return the rice to the heat and cook for a further 5 minutes. Sweeten to taste with honey.

  5. Spoon the rhubarb into four serving dishes. Top with the rice, then decorate with pieces of crystallized ginger before serving.
