Dessert Recipes - Fresh Lemon Cheesecake Recipe

Ingredients

  • 200 g/7 oz/1 small packet of ginger nut biscuits (cookies), crushed

  • 50 g/2 oz/1/4 cup butter, melted

  • 225 g/8 oz/1 cup low-fat soft cheese

  • 100 g/4 oz/1/2 cup fromage frais

  • 90 ml/6 tbsp thick plain yoghurt

  • 50 g/2 oz/1/4 cup icing (confectioners') sugar, plus extra for dusting

  • Finely grated rind and juice of 1 large lemon

  • Crystallized (candied) lemon slices and angelica leaves, to decorate


Method:

  1. Mix the crushed ginger nuts into the butter and press into the base of a 20 cm/8 in flan tin (pie pan).

  2. Beat together the cheese, fromage frais, yoghurt, icing sugar, lemon rind and 5 ml/1 tsp of the lemon juice.

  3. Turn into the flan tin and level the surface. Chill for several hours or overnight.

  4. Dredge with sifted icing sugar and decorate with crystallized lemon slices and angelica leaves before serving.
