Dessert Recipes - Kiwi Quark Brulee Recipe

Ingredients

• 4 kiwi fruit, sliced

• 225 g/8 oz/1 cup quark

• 3 eggs

• Finely grated rind of 1 lime

• 30 ml/2 tbsp caster (superfine) sugar

• Granulated sugar

Method:

1. Put the kiwi fruit in the base of a fairly shallow flameproof dish.

2. Whisk together the quark, eggs, lime rind and caster sugar in a basin. Stand the basin over a pan of hot water and cook, stiffing, until the mixture thickens.

3. Spoon over the kiwi fruit, leave to cool, then chill. Sprinkle a thick layer of granulated sugar over the quark custard to cover completely.

4. Place under a hot grill (broiler) until the sugar melts and caramelizes. Chill again until hard.
