Dessert Recipes - Lime Cobweb Cheesecake Recipe

Ingredients

  • 200 g/7 oz/1 small packet of digestive biscuits (graham crackers), crushed

  • 50 g/2 oz/1/2 cup chocolate chips

  • 50 g/2 oz/1/4 cup butter, melted

  • 500 g/1 lb 2 oz/2 1/2 cups Mascarpone cheese

  • 40 g/1 1/2 oz/1/4 cup icing (confectioners') sugar, sifted

  • Finely grated rind and juice of 2 limes

  • 30 ml/2 tbsp chocolate spread


Method:

  1. Mix the crushed biscuits with the chocolate chips and butter and press into the base of an 18 cm/7 in spring form cake tin (pan).

  2. Beat the cheese with the icing sugar and lime rind and juice. Spoon into the tin and level the surface. Chill until firm.

  3. Remove from the tin and place on a serving plate. Spoon the chocolate spread into a paper piping bag and snip off the very tip of the bag, or use an icing syringe with a plain tube (tip), and pipe a spiral of chocolate starting at the centre.

  4. Using a skewer or cocktail stick (toothpick), draw lines from the centre to the edge all round to form a cobweb pattern. Serve chilled.
