Recipe
Ingredients

50 g/2 oz/ cup
butter, melted
-
200 g/7 oz/1 small
packet of chocolate rich tea biscuits
(cookies), crushed

300 g/11 oz/1 medium can of mandarin oranges, drained,
reserving the juice
-
15 g/1/2 oz/1 tbsp
powdered gelatin
-
225 g/8 oz/1 cup
Mascarpone cheese
-
2 eggs, separated
-
75 g/3 oz/1/3 cup caster
(superfine) sugar
-
75 g/3 oz/1/3 cup soured (dairy sour) cream
-
30 ml/2 tbsp orange
liqueur
-
Grated rind and juice
of 1
tangerine
-
Grated chocolate, to decorate
Method:

Mix together the butter and biscuit crumbs and press
into the base of a 20 cm/8 in spring form
cake tin (pan). Chill while preparing the filling.

Chop the mandarins. Sprinkle the gelatin over the
reserved juice in a small bowl and leave to soften
for 5 minutes.

Stand the bowl in a pan of hot water,
or heat in the microwave briefly, to dissolve.

Beat
together the cheese, egg yolks, 50 g/2 oz/1/4 cup of
the sugar, the soured cream and liqueur until
smooth. Stir in the dissolved gelatin.

Fold in the
tangerine rind and juice and the chopped mandarins.
Whisk the egg whites until stiff, then whisk in the
remaining sugar.

Fold into the fruit mixture and
spoon over the biscuit base. Chill for 3-4 hours
until set before decorating with grated chocolate.
