Ingredients

ml/4 tbsp medium-fat soft cheese Icing (confectioners')
sugar, to taste

Finely grated rind of
1/2 orange (optional)

ripe peaches, skinned, halved and stoned (pitted)

300 g/11
oz/1 medium can of raspberries, drained, reserving the juice
Method:

Sweeten the cheese to taste with icing sugar and
flavor with the orange rind, if liked.

Sandwich the
peach halves together in pairs with the cheese and
place in four small glass dishes. Chill.

Pass the
raspberries through a sieve (strainer) to remove the
seeds, then thin the puree with a little of the
juice to give a smooth pouring consistency. Spoon
over the peaches
and serve.
