Dessert Recipes - Pear Conde Recipe

Ingredients

  • 600 ml/2 1/2 cups milk

  • 40 g/1 1/2 oz/3 tbsp caster (superfine) sugar

  • 75 g/3 oz/1/3 cup short-grain rice

  • Thinly pared rind of 1/2 orange

  • 150 ml/2/3 cup double (heavy) cream

  • 520 g/1 lb 3 oz/1 very large can of pear halves, drained, reserving the juice

  • 90 ml/6 tbsp apricot jam (conserve)

  • Chopped pistachio nuts, to decorate


Method:

  1. Put the milk in a saucepan with the sugar, rice and orange rind.

  2. Bring to the boil, reduce the heat, cover and cook over the gentlest possible heat, stirring occasionally, for about 1 hour, until the rice is tender and creamy.

  3. Remove the orange rind. Turn into a serving dish, leave until cold, then chill.

  4. Whip the cream until peaking and spread over the rice. Top with the pear halves. Warm the jam with  15 ml/1 tbsp of the pear juice and brush all over the pears.

  5. Scatter with chopped pistachio nuts and chill again until ready to serve.
