Dessert Recipes - Pineapple Crowdie Recipe
Ingredients

75 g/3 oz/3/4 cup
coarse oatmeal
-
225 g/8 oz/1 cup
fromage frais
-
50 g/2 oz/1/4 cup
caster (superfine) sugar
-
60 ml/4 tbsp clear honey
-
30 ml/2 tbsp white rum
-
300 g/11 oz/1 medium
can of crushed pineapple, drained
thoroughly

Toasted flaked
(slivered) coconut, to decorate
Method:

Toast the oatmeal under a moderate grill (broiler),
turning occasionally, until golden brown.

Beat
together the fromage frais, sugar, honey and rum.
Just before serving, fold in the pineapple and
toasted oatmeal.

Spoon into glasses and decorate
with a little toasted coconut before serving.
