Dessert Recipes - Pineapple Floating Islands Recipe

Ingredients

  • 50 g/2 oz/1/4 cup butter, softened

  • 100 g/4 oz/1/2 cup caster (superfine) sugar

  • 25 g/1 oz/1/4 cup corn flour (cornstarch)

  • 2 large eggs, separated

  • 300 ml/1 1/4 cups milk

  • 150 ml/2/3 cup single (light) cream

  • 440 g/15 1/2 oz/1 large can of crushed pineapple, drained, reserving the juice


Method:

  1. Beat together the butter and half the sugar until light and fluffy. Blend in the corn flour and the egg yolks.

  2. Warm the milk and cream but do not boil. Pour into the butter mixture. Return to the pan and cook, stirring, until thickened.

  3. Put the pineapple in the base of a 1.5 liter/2 1/2 pt/6 cup ovenproof dish. Pour the custard over.

  4. Whisk the egg whites until stiff, add 40 g/1 1/2 oz/ 3 tbsp of the remaining sugar and whisk again until stiff and glossy.

  5. Spoon four piles of the meringue mixture on top of the custard to make 'islands' and sprinkle with the remaining sugar.

  6. Bake in a preheated oven at 150°C/300°F/gas mark 2 for 30 minutes until golden. Serve hot or cold with the reserved pineapple juice.
