Dessert Recipes - Rice Creme Brulee Recipe

Ingredients

  • 75 g/3 oz/1/3 cup short-grain rice

  • 600 ml/2 1/2 cups milk

  • 15 ml/1 tbsp caster (superfine) sugar

  • 4 egg yolks

  • 250 ml/8 fl oz/1 cup double (heavy) cream

  • 2.5 ml/1/2 tsp vanilla essence (extract)

  • Butter, for greasing

  • 60 ml/4 tbsp light brown sugar


Method:

  1. Put the rice and milk in a saucepan and bring to the boil. Reduce the heat and simmer for 20 minutes until tender.

  2. Whisk together the caster sugar and egg yolks, then stir in the cream. Stir into the rice with the vanilla essence. Pour into a buttered shallow ovenproof dish.

  3. Stand the dish in a baking tin (pan) with enough hot water to come half-way up the sides of the dish.

  4. Cook in a preheated oven at 150°C/300°F/gas mark 2 for 1 1/2 hours until set. Remove from the tin. Leave to cool, then chill.

  5. When ready to serve, sprinkle the brown sugar liberally over the surface of the rice.

  6. Place under a hot grill (broiler) until the sugar melts and caramelizes. Serve straight away.
