Ingredients

50 g/2 oz/1/4 cup
short-grain rice
-
600 ml/2 1/2 cups milk
-
25 gl/1 oz/2 tbsp
granulated sugar

A pinch of grated nutmeg

A knob of butter or
margarine
Method:
-
Put
the rice in a flameproof dish and stir in the milk
and sugar. Bring to the boil, stirring. Dust with
nutmeg and dot with butter.

Transfer to a preheated
oven at 150°C/300°F/gas mark 2 and cook for 2
hours or until tender, creamy and golden brown on
top.
