Dessert Recipes - Rich Raspberry Cheesecake Recipe

Ingredients

  • 200 g/7 oz/1 small packet of digestive biscuits (graham crackers), crushed

  • 50 g/2 oz/1/4 cup butter, melted

  • 15 ml/1 tbsp light brown sugar

  • 10 ml/2 tsp powdered gelatin

  • 15 ml/1 tbsp water

  • 175 g/6 oz/3/4 cup medium1at soft cheese

  • 150 ml/2/3 cup crème fraiche

  • 225 g/8 oz raspberries, mashed, reserving a few whole ones for decoration

  • 50 g/2 oz/1/3 cup icing (confectioners') sugar

  • 150 ml/2/3 cup whipping cream


Method:

  1. Mix together the biscuit crumbs, butter and brown sugar. Press into the base and sides of a 20 cm/8 in flan dish (pie pan). Chill until firm.

  2. Meanwhile, sprinkle the gelatin over the water in a small bowl and leave to soften for 5 minutes.

  3. Stand the bowl in a pan of hot water and stir until dissolved (or heat briefly in the microwave).

  4. Beat the soft cheese with the creme fraiche. Stir in the dissolved gelatin, then fold in the mashed raspberries and sweeten to taste with the icing sugar.

  5. Whip the cream until peaking. Reserve a little for decoration, then fold the remainder into the raspberry mixture. Turn into the prepared flan case (pie shell) and chill until set.

  6. Decorate with the remaining whipped cream and reserved whole raspberries.
