Dessert Recipes - Rich Vanilla Cheesecake Recipe

Ingredients

  • 200 g/7 oz/1 small packet of digestive biscuits (graham crackers), crushed

  • 75 g/3 oz/1/3 cup unsalted (sweet) butter, melted, plus extra for greasing

  • 750 g/1 1/2 lb/3 cups full fat soft cheese

  • 225 g/8 oz/1 cup caster (superfine) sugar

  • 2 eggs

  • 5 ml/1 tsp vanilla essence (extract)

  • 150 ml/2/3 cup soured (dairy sour) cream

  • Grated nutmeg, to decorate


Method:

  1. Mix the crushed biscuits into the butter. Press into the base and a little way up the sides of a 20 cm/8 in deep, round, loose-bottomed cake tin (pan).

  2. Beat the cheese with the sugar, eggs and vanilla until smooth. Turn into the prepared tin and smooth the surface.

  3. Bake in a preheated oven at 150°C/300°F/gas mark 2 for 1-1 1/4 hours or until just set. Turn off the oven and leave to cool in the oven. Chill for at least 2 hours or overnight.

  4. Decorate the top with swirls of soured cream and dust with grated nutmeg.
