Dessert Recipes - Scottish Cream Crowdie Recipe

Ingredients

• 100 g/4 oz/1 cup coarse oatmeal

• 600 ml/1 pt/2 1/2 cups whipping cream

• 45 ml/3 tbsp sweet sherry

• 15 ml/1 tbsp caster (superfine) sugar

• Fresh raspberries or strawberries (optional), to decorate

Method:

1. Toast the oatmeal under a moderate grill (broiler), turning occasionally, until golden brown.

2. Whip together the cream, sherry and sugar until softly peaking. When ready to serve, fold all but 15 ml/1 tbsp of the toasted oatmeal into the cream.

3. Spoon into serving dishes and sprinkle with the remaining oatmeal. Top with a few raspberries or strawberries to decorate, if liked.
