Ingredients

250 g/9 oz/generous 1
cup Mascarpone
cheese

eggs, separated

ml/4 tbsp caster (superfine) sugar

10 ml/2 tsp strong
black coffee

g/4 oz/1 cup plain (semi-sweet)
chocolate, broken into small pieces (optional)

ml/4fl oz/1/2 cup weak coffee

ml/6 tbsp amaretto or coffee liqueur

sponge (lady) fingers

Drinking (sweetened) chocolate powder, for
dusting
Method:

Whisk together the cheese and egg yolks
and gradually add the
sugar. Pour in the strong coffee and mix thoroughly.

Whisk the egg whites until stiff and fold into the
cheese mixture. Gently stir in the chocolate pieces,
if using.

Mix the weak coffee with the liqueur and
dip half the sponge fingers in it. Use to line the
base of a shallow serving dish. Pour in half the
cheese mixture.

Dip the remaining sponge fingers in
the coffee mixture and lay on top. Top with the
remaining cheese mixture. Tap the dish gently on the
work surface to settle the contents.

Chill for at
least 2 hours. Dust with chocolate powder before
serving.
