Ingredients

• 100 g/4 oz/1 1/4 cup unsalted (sweet) butter, softened

• 250 g/9 oz/1 1/2 cups icing (confectioners') sugar

• Finely grated rind and juice of 1 lemon

Method:

1. Beat together the butter and icing sugar until smooth. Beat in the lemon rind and juice.

2. Spoon into a serving bowl and chill until ready to serve.
