Ingredients

oz/1 1/4 cup unsalted
(sweet) butter, softened

250 g/9 oz/1
1/2 cups icing
(confectioners') sugar

Finely grated rind and
juice of 1 lemon
Method:

Beat together the butter and icing sugar until
smooth. Beat in the lemon rind and juice.

Spoon into a serving bowl and chill until ready to
serve.
