Ingredients

30 ml/2 tbsp corn flour (cornstarch)

300 ml/1 1/4 cups milk
-
150 ml/2/3 cup
double (heavy) cream
-
5 ml/1 tsp vanilla
essence (extract)

50 g/2 oz/1/4 cup
butter
-
100 g/4 oz/1/2 light
brown sugar
-
1 Basic Pastry Plan
Case, baked
-
50 g/2 oz peanut
brittle, crushed, to decorate
Method:

Blend
the corn flour and milk in a saucepan with the cream
and vanilla essence.
-
Bring to the boil and cook for
1 minute, stirring, until thickened. Melt the butter
and sugar in a saucepan. Stir into the custard.

Pour
into the flan case and chill until set. Decorate
with crushed peanut brittle just before serving.
