Dessert Recipes - Butterscotch Beauty Recipe

Ingredients

• 30 ml/2 tbsp corn flour (cornstarch)

• 300 ml/1 1/4 cups milk

• 150 ml/2/3 cup double (heavy) cream

• 5 ml/1 tsp vanilla essence (extract)

• 50 g/2 oz/1/4 cup butter

• 100 g/4 oz/1/2 light brown sugar

• 1 Basic Pastry Plan Case, baked

• 50 g/2 oz peanut brittle, crushed, to decorate

Method:

1. Blend the corn flour and milk in a saucepan with the cream and vanilla essence.

2. Bring to the boil and cook for 1 minute, stirring, until thickened. Melt the butter and sugar in a saucepan. Stir into the custard.

3. Pour into the flan case and chill until set. Decorate with crushed peanut brittle just before serving.
