Ingredients

g/3 oz/1/3 cup
caster (superfine) sugar

2 eggs
-
Finely grated rind and
juice of 1
large lemon
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter, melted

1 Basic Pastry Flan
Case, baked
-
75 ml/5 tbsp double
(heavy) cream, whipped
-
30 ml/2 tbsp toasted
chopped nuts
Method:
-
Beat together the sugar, eggs, lemon rind and juice
and the melted butter. Pour into the flan case (pie
shell).

Bake in a preheated oven at
180°C/350°F/gas mark 4 for about 15-20 minutes
until set.

Leave to cool, then chill before
decorating with whipped cream and chopped nuts.
