Dessert Recipes - Lemon Flan Recipe

Ingredients

  • 75 g/3 oz/1/3 cup caster (superfine) sugar

  • 2 eggs

  • Finely grated rind and juice of 1 large lemon

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter, melted

  • 1 Basic Pastry Flan Case, baked

  • 75 ml/5 tbsp double (heavy) cream, whipped

  • 30 ml/2 tbsp toasted chopped nuts


Method:

  1. Beat together the sugar, eggs, lemon rind and juice and the melted butter. Pour into the flan case (pie shell).

  2. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 15-20 minutes until set.

  3. Leave to cool, then chill before decorating with whipped cream and chopped nuts.
