Ingredients

450 ml/2 cups
single (light) cream

2 egg yolks
-
100 g/4 oz/1/2 cup
caster (superfine) sugar

5 ml/1 tsp almond essence
(extract)
-
300 ml/1 1/4 cups double (heavy) cream
-
50g/2 oz/1/2 cup ground or
finely chopped almonds
Method:

Prepare
as for any of the vanilla
ice
creams, but substitute
almond essence (extract)
for the
vanilla and whisk in the finely chopped or ground almonds after the final whisking, then
freeze
until firm.
