Dessert  Recipes - Apricot Water Ice Recipe

Ingredients

  • 450 g/1 lb apricots, halved and stoned (pitted)

  • 300 ml/1 1/4 cups water

  • Finely grated rind and juice of 1 lemon

  • 5 ml/1 tsp powdered gelatin

  • 75 g/3 oz/1/3 cup icing (confectioners') sugar

  • 1 egg white


Method:

  1. Put the apricots in a saucepan with the water, lemon rind and juice. Bring to the boil, reduce the heat, cover and simmer gently until the apricots are tender.

  2. Stir in the gelatin until dissolved. Puree in a blender or food processor with the sugar.

  3. Turn into a freezer proof container and leave until cold. Freeze until half-frozen. Whisk with a fork to break up the ice crystals.

  4. Whisk the egg white until stiff and fold into the mixture with a metal spoon. Freeze until firm.
