Dessert  Recipes - Blackcurrant Sorbet Recipe

Ingredients

  • 325 ml/1 1/2 cups water

  • 225 g/8 oz blackcurrants, stripped from their stalks

  • 100 g/4 oz/1/2cup caster (superfine) sugar

  • 5 ml/1 tsp lemon juice 2 egg whites


Method:

  1. Put 30 ml/2 tbsp of the water in a saucepan with the blackcurrants and stew gently for 10 minutes.

  2. Meanwhile, in a separate saucepan, gently heat the remaining water and the sugar, stirring until the sugar has dissolved, then bring to the boil and boil for 5 minutes.

  3. Puree the blackcurrants and sugar syrup in a blender or food processor. Add the lemon juice. Pass through a sieve (strainer) to remove the seeds.

  4. Turn into a freezer proof container, leave until cold, then freeze until firm around the edges. Whisk thoroughly with a fork to break up the ice crystals.

  5. Whisk the egg whites until stiff and fold in with a metal spoon. Return to the freezer and freeze until firm.
