Sorbet Recipe
Ingredients

ml/1 1/2 cups water

g/8 oz blackcurrants, stripped from their stalks

g/4 oz/1/2cup caster (superfine) sugar

ml/1 tsp lemon juice 2 egg whites
Method:

Put 30 ml/2 tbsp of the water in a saucepan
with the blackcurrants and stew gently for 10
minutes.

Meanwhile, in a separate saucepan, gently
heat the remaining water and the sugar, stirring
until the sugar has dissolved, then bring to the
boil and boil for 5 minutes.

Puree the blackcurrants
and sugar syrup in a blender or food processor. Add
the lemon juice. Pass through a sieve (strainer) to
remove the seeds.

Turn into a freezer proof container,
leave until cold, then freeze until
firm
around the
edges. Whisk thoroughly with a fork to break up the
ice crystals.

Whisk the egg whites until stiff and
fold in with a metal spoon. Return to the freezer
and
freeze until
firm.
